Easy AF Breakfast Burritos
So there are a few things in here that if you don’t care as much just leave them out, I’ll mark them as optional.
Ingredients:
- Tortillas (Mission are the best)
- Eggs - basically 2 per person
- Bacon - again like 2 per person
- Tater Tots - just get the frozen ones, it makes life easier then using fucking potatoes. Just about 6 per burrito.
- Salsa - This one is up to you, but I would get some sort of Salsa Fresca (the ones that are normally kept refrigerated)
- Butter - salted. You’ll need this for the eggs. If you don’t use the fancy next ingredients then just use about .5 tsp per 2 eggs.
- Grated Cheese I go with sharp cheddar most of the time and grate it myself, but you can use that Mexican blend stuff if you want.
- Salt/Pepper
Optional Ingredients:
- Cumin it’s a spice.
- Creme Fraiche this will make the eggs have a fluffy creamy texture and will make you look like you know what you are doing. Say, “Gordon Ramsay does this for his eggs” and people will think you care about stuff.
- Hot Sauce
Instructions
- Make the tater tots like it says to on the bag
- Start the bacon, cook it on medium heat until almost crispy on both sides. Normally I just look to see if it has started to curl and darken on one side, then flip it and check it after a few minutes.
Either cook eggs my fancy way, which is not that complicated, or cook them however the fuck you want. They are just scrambled eggs. My way includes the Creme Fraiche:
- Add the butter to the pan, while it is melting add the eggs in.
- Stir over a medium heat until the eggs start to cook. Remove from heat continue stirring eggs for about 20-25 seconds. Return to heat, continue to stir eggs until they start to clump, remove from heat and add the creme fraiche. Return to heat stirring in creme fraiche. Remove from heat when eggs are clumpy, but soft (stir the whole time). Finish off with some salt and pepper.
- Wipe down the pan from the eggs and start warming your tortilla. This is important because it will break while you try to wrap it if it isn’t warm. Add the eggs, then the cheese, then the tater tots (do a column of them, about 6 per burrito so it isn’t over filled), then 2 pieces of bacon, top off with a teaspoon of salsa spread over the whole thing. (Optional) add a pinch or two of cumin. Wrap it up. Serve with hot sauce, or don’t.
